Italian Vanilla Sponge Cake

Ingredients:

4 eggs

1 Tsp Vanilla*

2 C Pastry Flour*

2 Tsp Baking Powder*

2 C Sugar*

1/2 C Butter*

1 C Whole Milk

1/2 Tsp Salt*

Instructions:

  1. Pre heat oven to 375*
  2. Beat eggs in a Bosch mixer with wire whips for 3 minutes
  3. Add sugar and vanilla. Mix for another 3 – 5 minutes until mixture is light and fluffy
  4. In a separate bowl mix together flour, baking powder and salt
  5. Add to sugar and egg mixture mix on low until well combined
  6. In a saucepan on low heat mix butter and milk together.
  7. On low speed add butter and milk to batter
  8. Grease 2 8” round pans pour even amounts of batter into each pan
  9. Bake for 35 minutes until the centre bounces back when touched (or using a cake tester)
  10. Remove from oven and let stand 10 minutes before turning out
