Ingredients

  • 1 1/4 C sifted flour
  • 3 Tsp baking powder
  • 1 Tbsp sugar
  • 1/2 Tsp salt
  • 1 Beaten egg
  • 1 Cup of Milk
  • 2 Tbsp oil

Cooking Instructions

Sift together dry ingredients

Combine egg, milk, and oil – add to dry ingredients

Stir until flour is just moistened – its okay if the batter is lumpy.

Pour batter into batter dropper, drop mixture onto a pre- heated non stick, or greased
griddle or frying pan.

Cook until golden, and flip to cook both sides.

Other suggestions:

* Before flipping pancake add drained fruit or chocolate chips to each pancake.
* 1/2 cup of well drained crushed pineapple (or other puree fruit) can be added directly
to batter – do keep an eye of batter consistency – flour may need to be adjusted to
accommodate added moisture.
* Buttermilk, yoghurt, sour cream or sour milk can be substituted for milk – add 1/2 tsp
of baking soda, and reduce baking powder to 2 tsp.
