Lavender is no longer just for scented powder and perfumes. These tiny, bright blue flowers have a sweet, floral flavour that is versatile enough to add a surprising and distinctive taste to both sweet and savoury dishes. It’s pretty strong, though, so add carefully. It goes well with roast chicken or lamb and is common in Mediterranean spice blends like Herbes de Provence. In baking, it can be chopped and added to cake and cookie batters, infused in creams and syrups, and used as a garnish. Seal a few flowers in a jar of sugar for a week to make a delicately flavoured lavender sugar for tea or baking.
