Description
This ancient grain is the earliest known wheat cultivar. Its name means “single grain”, and it is the only unhybridized wheat. It has 14 chromosomes, compared to modern wheat’s 42 chromosomes, and a different form of gliadin, which may be why many people with gluten sensitivities can comfortably digest Einkorn. It has a deep, toasty and nutty flavour and is rich in essential nutrients such as lutein, thiamin, zinc, iron, potassium, riboflavin, Vitamins B6 and A, protein and fibre. Einkorn flour can be used as a direct substitute for other whole wheat flours, and einkorn berries can be used in the place of rice or pot barley.
